Steph’s Gluten-Free Vegan Banana Bread

 1 cup Almond meal/flour
 1 cup Buckwheat flour
 ½ cup Brown Rice Flour
 ½ cup Tapioca Starch
 1 tsp Cinnamon
 ½ tbsp Baking soda
 1 tbsp lemon juice or apple cider vinegar
 4 Ripe Bananas
 2 tbsp Ground flaxseed +4 Tbsp water
  cup Dates
 ¼ cup Chopped Nuts
 ¼ cup Choc Chips

Preheat oven to 175°C or 180°C

Mix dry ingredients together in a medium bowl

Make flax egg with water and flaxseed in a separate bowl

Mash bananas in a big bowl

Mix baking soda and lemon juice or vinegar in a small bowl to obtain a chemical reaction. This is to replace baking powder. Then add this mixture to the bananas

Add the flax egg mixture to the bananas and stir

Add dry ingredients with the wet ingredients and stir until incorporated

Add nuts, chocolate, and chopped dates

Transfer to a non-stick loaf pan and bake from 30 to 45 min. Once golden brown, take out of the oven and cool on a baking rack.
