Hempfu (hemp tofu)

Yields1 Serving
 3 ¾ cups Hemp Hearts
 7 ½ cups Water
 1 Lemon
 salt, pepper and turmeric to taste

Method
Mix 3 & 3/4 cups hemp hearts and 7 & 1/2 cups water in a blender.

Heat the mixture in a saucepan, stirring constantly and allow it come to the heat to just before boiling point. Turn the heat down and keep stirring as the curds form. Keeping the heat low continue to stir the curds for about 4 minutes.

Remove from the heat and add the juice of one lemon. Allow the curds to cool for about 15 minutes.

Place curds in a cheesecloth and strain the mixture. (Be careful mixture may still be hot)

You can use the hempfu at this stage if you like or you can leave it longer to let it firm up a bit. I left it for a few hours and then fried it up like scrambled tofu and added some turmeric and salt and it is absolutely delicious- I maybe even prefer it to regular tofu!
